The grape harvest is manual and usually takes place during the first ten days of October. This is followed by fermentation and maceration in stainless steel tanks at a controlled temperature of 25-28°C for 18-20 days. After the malolactic fermentation, the wine rests for about 20 months in small oak barrels before being bottled and aged for 8 months in the bottle before being put on the market.

A wine from cintense ruby red colour. The bouquet is large, full of intense hints of red berry fruit that blend with the scent of spices that become more and more decisive with ageing. On the palate it is a powerful wine with a full and round taste right from the first sip.

A warm red which, thanks to the excellent balance with the acidity, leaves room in the mouth for an intense and persistent aftertaste. A drink that proves excellent in combination with well-aged cheeses, game and meat-based dishes, but which still gives unique sensations even if tasted alone.

Fosarin — the estate’s signature wine, awarded Tre Bicchieri. Located in Cormòns, Collio Goriziano; the name derives from "ronco" and from the presence of yew trees. A broad range of wines, including Fosarin, Cjarandon, Pinot Grigio, Sauvignon, Ribolla Gialla and Picolit. An agricultural philosophy focused on vineyard care and the targeted management of fermentations to preserve typicity.
Winery history
The estate was founded when Fabio Coser, together with his wife Daniela, purchased a property in the heart of the Collio; the name comes from the presence of colonies of badgers and from the vineyards’ typical 'ronco' layout. The winery has grown over the years, becoming a local reference for Collio white wines.
Production philosophy
Quality-focused approach to raw materials: careful attention to vine training systems and frequent vineyard inspections to bring healthy grapes to the winery and allow winemaking that highlights the typicity of the terroir. In the historic blends, ageing in wood and vinification in stainless steel are balanced to achieve complexity without overpowering the fruit.
Terroir and vineyards
Collio Goriziano, in the municipality of Cormòns, at altitudes ranging from approximately 140 to 200 m above sea level; close to the protected Plessiva area, characterized by terraced vineyards and a rich presence of flora and fauna. The territory is fundamental to the style of the wines, with a strong focus on indigenous and international white varieties cultivated in the area.
Awards and recognitions
The Collio Bianco 'Fosarin' has recently received notable accolades, including the Tre Bicchieri in the Vini d'Italia guide and the 'Vino Bianco dell’anno' award at Food & Travel Italia's 2026 Wine Awards.
