Sangiovese Superiore - I Quattro Bastioni, comes from organic farming, with a production amounting to 7,000 bottles.
The grape harvest takes place by hand, and begins in the second decade of September. Regarding the vinification, the Sangiovese grapes of the different clones are harvested together and fermented in blends. Fermentation and subsequent maceration on the skins take place in steel vats at a controlled temperature. The contact of the wine with the skins lasts on average 18 days; malolactic fermentation follows The refinement is 6 months in steel and at least 3 months in the bottle.
The nose releases a warm bouquet that tastes of red fruits, violet and orange and conquers with its velvety tannins. In the glass it is juicy, easy to drink but at the same time not at all banal. It is a perfect wine to pair with cheese platters, risottos and meat dishes.
