Bianco Bologna is an excellent wine that comes from vineyards of about 0.5 hectares cultivated at an altitude between 200 and 250 m a.s.l., with the soil composed of clay mixed with sand and limestone. The harvest is done manually; in the cellar the whole bunches are softly pressed, followed by fermentation in steel with selected yeasts. After fermentation, the lees are removed by static decantation, followed by a year of aging in steel for at least 12 months in the bottle. The wine is not subjected to sterile filtering.
The wine shines in a golden yellow color. The bouquet is fruity and floral of very ripe yellow fruit, dried flowers and elderberry, with hints of withering and typical hints of bottle aging. In the mouth it emerges with a lively freshness that mixes with the maturity of the aromas and gives life to a very pleasant balance.
A surprising taste that combines the typical freshness of the grape with an unusual aromatic complexity, with extremely ripe and full aromas. A wine that requires equally tasty dishes, it goes very well with aged cheeses, first and second courses based on fish, as well as being excellent with risotto with Parmigiano Reggiano.
