Pairing Aperitifs, appetizers, fish dishes
Elegant and immediately appealing, this Extra Dry vintage sparkling wine from Cavalieri Reali highlights a fragrant, welcoming profile. In the glass it shows fine bubbles and a pleasant liveliness; on the nose there are notes of white flowers, Golden apple and ripe pear, with a slight hint of bread crust. The palate is soft yet well supported by balanced freshness: the residual sweetness is barely perceptible, balanced by a savory minerality that enhances its drinkability and persistence. The texture is clean and linear, with a fine perlage that supports the freshness and gives a slightly creamy sensation on the palate; the balance between body and lightness makes it immediately pleasant even with a full meal.

It proves perfect as an aperitif and paired with light dishes: seafood starters, sushi, delicate cured meats or savory tarts. Serve chilled, in tulip glasses to appreciate the aromatic nuances and the creaminess of the foam. Best enjoyed well chilled, approximately between 6–8 °C, and in pairings that range from aperitifs to the most delicate fish preparations. Also excellent for informal toasts and convivial tables, it maintains good aromatic clarity without overpowering the food.
