On the palate a full, velvety texture emerges, well balanced between softness and a saline backbone, with returns of almond and vanilla that accompany a persistent and pleasantly warm finish. It is a Cognac to be enjoyed slowly, preferably in a tulip glass and at room temperature; the wooden case makes it suitable both for an important presentation and for storage. It pairs with caramel-based desserts, aged cheeses, or as a moment of contemplation at the end of a meal.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
