The harvest begins in late September, early October. The harvest is done manually, as in the past.
Subsequently the whole grapes are gently pressed, the resulting must is naturally clarified. Fermentation takes place in steel at a controlled temperature. Before bottling, which usually takes place in May, maturation takes place for 6 months on the fine lees.
In the glass the Sylvaner has a pale straw yellow color.
On the nose it releases intense fruity and floral notes, reminiscent of the scent of peaches, apricots and dried wild flowers.
Taste is waiting to be discovered. Its structure is juicy and rich in aromas, with good minerality and a very pleasant acidity and a long finish to be savored.
At the table it is recommended with aperitifs, fish dishes and sushi, but it is also an excellent match with pasta and white meat dishes.
