The Chardonnay Salento IGP BIO "Ecosistema" by Paolo Leo is a true expression of the richness and biodiversity of the Apulian terroir. Known for his commitment to environmental respect and sustainability, Paolo Leo produces this organic wine using methods that preserve the local ecosystem.

The Chardonnay Salento IGP BIO stands out for its bright straw-yellow color, with greenish reflections. On the nose, the bouquet is intensely aromatic, releasing aromas of white-fleshed fruits like peach and pear, enriched by delicate notes of white flowers and a light touch of vanilla, the result of a brief maturation in barrique.

On the palate, the wine offers a perfect balance between freshness and softness. Its lively acidity harmoniously combines with a rich and round structure, leading to a persistent finish that leaves room for fruity and slightly spicy sensations. The careful processing and use of grapes cultivated according to organic principles confer this Chardonnay with a purity of flavors that authentically reflects its place of origin.

Ideal as an aperitif, Paolo Leo's Chardonnay Salento IGP BIO pairs wonderfully with fish dishes, shellfish, and flavorful vegetable preparations. It is also an excellent choice to accompany risottos and delicate dishes based on chicken or turkey.

A wine that not only offers an excellent expression of the Chardonnay varietal but also pays tribute to the nature and land of Apulia, emphasizing the importance of sustainable production methods in the contemporary wine world.
