The Primitivo di Manduria DOC "Passo del Cardinale" by Paolo Leo is a red wine that embodies the essence of the Apulian territory, characterized by its robust intensity and deep aromas.

The Primitivo grape, one of the most representative of southern Italy, finds in Paolo Leo one of its most faithful interpreters. The manual harvest, followed by a long maceration and controlled temperature fermentation, enhances the varietal peculiarities of this grape, which then matures in wooden barrels for several months before bottling.

With an intense ruby red color with violet reflections, the "Passo del Cardinale" offers a rich and complex bouquet to the nose with hints of ripe fruits such as plum and black cherry, complemented by touches of vanilla and sweet spices due to wooden aging. On the palate, it is vigorous yet harmonious, with an alcohol content perfectly balanced with its marked tannic structure and a pleasant aromatic persistence.

It pairs splendidly with robust meat dishes such as braised and roasted meats, or aged cheeses. Also perfect for accompanying an evening of conversations by the fireplace, this wine proves to be a precious choice for those who love intense and memorable reds.

Winery history
The company known as Paolo Leo stems from the experience of several generations of Salento winegrowers and, in its current form, began with the bottling activity led by Paolo Leo in the late 1980s. The business has grown by supplementing its historic premises in San Donaci with a second winery inaugurated in 2020 in Monteparano, near the Primitivo di Manduria area.
Production philosophy
Enhancing the Salento region through the cultivation and winemaking of native grape varieties, adopting practices focused on environmental and economic sustainability. The estate produces both conventional lines and an organic-certified range, publishes sustainability reports and has obtained environmental responsibility certifications.
Terroir and vineyards
They operate in the heart of Salento, with their main base in the municipality of San Donaci and a second facility in Monteparano, at the gateway to the Primitivo di Manduria area. Their vineyards and appellations cover the characteristic areas of Salento and southern Puglia.
