The Salice Salentino DOP Riserva "Nemiratti" produced by the Paolo Leo winery is an excellent example of how the winemaking tradition of Salento can be expressed through a wine of great character and depth. This wine is made from Negroamaro grapes, a native variety that fully reflects the essence of the Puglian territory.

The harvest is carried out manually in the early hours of the morning to ensure that the grapes arrive at the winery still fresh. This is followed by a traditional fermentation with skin maceration, which allows for the maximum extraction of colorants and tannins, essential for ensuring the typical structure of this wine.

The Riserva "Nemiratti" is aged in oak barrels for at least 12 months, followed by further aging in the bottle. The result is a wine with an intense ruby red color, with reflections that tend towards garnet as it ages.

On the nose, the Salice Salentino Riserva offers complex notes of ripe plum, cherry jam, tobacco, and spices, with a slight hint of vanilla deriving from the oak aging. On the palate, the robustness of the Negroamaro is balanced by a pleasant freshness and good aromatic persistence, returning with elegant notes of ripe fruit and chocolate.

Ideal for pairing with intense dishes such as braised meats, game, and aged cheeses, this wine is best enjoyed when served at a temperature of 18°C. A true gem from Salento that can be savored immediately or left to age in the cellar for a few years to discover its evolution.

Winery history
The company known as Paolo Leo stems from the experience of several generations of Salento winegrowers and, in its current form, began with the bottling activity led by Paolo Leo in the late 1980s. The business has grown by supplementing its historic premises in San Donaci with a second winery inaugurated in 2020 in Monteparano, near the Primitivo di Manduria area.
Production philosophy
Enhancing the Salento region through the cultivation and winemaking of native grape varieties, adopting practices focused on environmental and economic sustainability. The estate produces both conventional lines and an organic-certified range, publishes sustainability reports and has obtained environmental responsibility certifications.
