Since 1200 the name Franciacorta has been used to identify the small region formed by the morainic hills in the province of Brescia. Today the word Franciacorta no longer identifies only the Territory, but also the Wine or the noble Italian DOCG "bubbles", and the Method with which they are produced.
Cabochon is today a key label of the Monte Rossa company, born in 1987 from an intuition of Emanuele Rabotti who brought back to the cellar and vineyards all the experiences which he gained while traveling the world.
They are harvested manually and placed in crates, to then be gently pressed, for no more than 48% of the yield. Each cru is vinified alone. The fermentation of the musts takes place in 250-litre oak barrels between September and February; the duration of the refinement is over 54 months.
A production of 6000 bottles, Cabochon Brut Millesimato is presented to the glass with a golden yellow color and a fine and persistent perlage. It intoxicates and seduces the olfactory sense with an elegant bouquet characterized by evident hints of hazelnut, pastry, sultanas, light coffee and light toasted notes. From the first sip, it is a wide and generous sip, of great complexity, well balanced and with an acid and salty finish characterized by notes of exotic fruit.
A Franciacorta of great class and refinement that does not disappoint. Excellent served in combination with platters of not too seasoned cheeses, courses based on cooked fish or to accompany important aperitifs.
