Lambrusco Otello Ceci gold label, is produced at the beginning of October in the hills of Parma.
The must is obtained with a light pressing, we proceed with the vinification in red, or with the maceration of the skins by carrying out repeated pumping over, this means that all the coloring substances and the typical aromas contained in these berries are extracted. Fermentation takes place at a controlled temperature, then the wine rests for a long time so that it naturally cleans itself of impurities, then it is decanted into special thermo-conditioned isobaric tanks for three months, in which the second fermentation takes place.
Lambrusco Otello Gold Label can be considered the masterpiece wine of Cantine Ceci, it has a beautiful dark ruby red color with violet reflections. The nose is intense and elegant with fruity aromas of berries and blackberry, raspberry, strawberry and fresh flowers.
In the mouth the taste is fresh, rather sweetish, slightly tannic, very balanced with a good and pleasant persistence in the finish.
It is perfect in combination with cured meats, red and white meats and medium-aged cheeses.
