Distillation and production

Production method

Production takes place at the facility/opificio in Via Molino Vecchio: distillation with a traditional discontinuous plant for grappa, use of small alembics for some references (e.g. gin) and in-house processing of liqueurs following family recipes.

Distillation

Traditional discontinuous method (caldaiette and distillation column); presence of a historic plant with copper caldaiette and plate columns; for some processes a small 100 L alembic is employed.

Ageing

Aging in the cellar; some reserve grappa are aged in barriques for at least 18 months.

Producer history Elena Borra Distillerie

Production began in an old mill that gave the company its name: distillation activity is documented since 1933, when Ugolino started distilling the pomace of the Langhe, Monferrato and Roero hills. The activity continued for generations up to the current management under the Elena Borra label, which carries on the family tradition and artisanal approach.

Production philosophy

Strong link with the Piedmont territory and local raw materials; artisanal production and attention to traditional recipes handed down within the family. Valorisation of single-varietal pomace and in-house processing to maintain control over the quality and identity of the distillates and liqueurs.
