Production method

In-house production with dedicated distillations depending on the category: grappa is produced using steam distillation and controlled-heat stills; some distillates (e.g. Grappa XO) are obtained in copper stills and aged for a long time; the whisky is produced by discontinuous bain-marie distillation of blends of malts.

The reality known as Distilleria Sibona originates in the early 20th century. Over time it has specialised in producing grappa from selected pomace of the Langhe and Roero and has developed an extended range of distillates and liqueurs. It retains the historic distillation licence No. 1 and is active in production, ageing and bottling of its products.

Production philosophy

Combines tradition and experimentation: careful selection of the best pomace, attention to distillation techniques and long wood ageing for the reserves, with attention also to packaging (registered "graduated" bottle). The company emphasises its connection to the Langhe and Roero territory.
