Historic Piedmont distillery based in Piobesi d'Alba (CN), known for a range that includes single-varietal and reserve grappa, amari, vermouth, gin and artisanal whisky; it holds the historic distillation licence No. 1.
The reality known as Distilleria Sibona originates in the early 20th century. Over time it has specialised in producing grappa from selected pomace of the Langhe and Roero and has developed an extended range of distillates and liqueurs. It retains the historic distillation licence No. 1 and is active in production, ageing and bottling of its products.
Production philosophy
Combines tradition and experimentation: careful selection of the best pomace, attention to distillation techniques and long wood ageing for the reserves, with attention also to packaging (registered "graduated" bottle). The company emphasises its connection to the Langhe and Roero territory.
Territory
Piobesi d'Alba (CN) – area at the confluence of Roero and the Langhe, Piedmont (a zone renowned for great wines such as Barolo, Barbaresco, Barbera, Moscato).
Awards and recognition
Multiple international awards cited for individual references: Amaro Sibona has received medals (gold/silver) at the Concours Mondial de Bruxelles and recognitions at the Internationaler Spirituosen Wettbewerb; Grappa XO and other reserves have been awarded in various competitions (Concours Mondial, IWSC, International Spirits Challenge, Alambicco d'Oro, Guida Bibenda).
Production method
In-house production with dedicated distillations depending on the category: grappa is produced using steam distillation and controlled-heat stills; some distillates (e.g. Grappa XO) are obtained in copper stills and aged for a long time; the whisky is produced by discontinuous bain-marie distillation of blends of malts.
Distillation
Steam distillation for traditional grappa; copper stills for some distillates and reserves; discontinuous bain-marie still for the whisky (premium malt blend).
Ageing
Ageing in stainless-steel tanks for some references; prolonged ageing in barrels and tonneaux for reserves (over 10 years for some XOs); use of different casks for finishes and experimentation.
