It expresses a fresh, immediate personality dominated by the green notes of agave: cut grass, lime zest and a hint of hay that are appealing without being intrusive. The aromatic profile remains dry and linear, with a slight mineral tension that defines the aromatic space. It is not an opulent product: the tone is lean and direct, with a present but controlled warmth that invites the next sip. A subtle floral veil in the background enriches the complexity without weighing it down.

On the palate it proves clean and lively, with a profile that favors freshness and salinity rather than buttery softness. The finish is persistent with citrus echoes and a subtle earthy note that balances the drink; the persistence leaves a clear, pleasant sensation without making it heavy. It serves well neat, at room temperature or slightly chilled, and is also ideal as the heart of fresh cocktails or paired with grilled fish, ceviche, or fresh cheeses. It lends itself well to mixing when a green, bright character is desired.

Vecindad is a project/brand curated by Destilería Santa Sabia (Guadalajara) that gathers and bottles agave distillates (raicilla, tequila and other agave spirits) and some expressions of aguardiente/rum. The range showcases local maguey varieties from Jalisco (with some cuvées also from Nayarit and Colima) and many bottles are tied to local producers or farming families.

Distillation
