The Barolo DOCG Pajana from Domenico Clerico appears clear with a garnet colour and ruby highlights. On the nose it opens with sensations of ripe red fruit, light spice notes and floral hints typical of wines with ample structure, accompanied by earthy and mineral nuances. On the palate it shows full body, present yet polished tannins, a good balance between acidity and juiciness and a long finish that invites reflection.

It is a wine that requires attention at service: it is advisable to open it in advance or allow it to breathe to soften the more closed components; a serving temperature around 18 °C enhances its complexity. It pairs with red meats, braised dishes, flavourful foods and aged cheeses; it suits convivial occasions or moments of slow tasting. For those with a cellar it can be further aged in bottle, but it is equally enjoyable in the short term for those who prefer fresher notes.

Winery history
Winemaking activity began in the late 1970s (Clerico took over/started working the vineyards in the 1970s) and he became a leading figure of modern Barolo. Domenico Clerico died on 16 July 2017.
Production philosophy
Emphasis on single crus and careful vineyard management; temperature‑controlled vinification, combined ageing in barriques and Slavonian casks, and a respectful agricultural approach (organic practices cited though not always certified).
Terroir and vineyards
Based in Monforte d'Alba; vineyards in several Monforte crus (Ginestra — Pajana and Ciabot Mentin — Mosconi — Bussia). Pajana: about 1.8 ha, 290–350 m asl; soils of loam/sand/clay with traces of limestone.
