The Nebbiolo vineyards are cultivated in Castiglione Falletto, at an altitude of about 300-350 m. above sea level The harvest is done manually with careful selection of the grapes, then placed in baskets, around mid-October. The refinement is about 40 months in traditional oak barrels, then continues in the bottle in the basement of the cellar at controlled temperature and humidity.
It has a deep red color with reflections ranging from intense ruby to garnet. Very complex aromas arrive on the nose, with floral aromas of macerated violet and balsamic hints, spicy returns reminiscent of licorice root and nutmeg. The taste is clean, structured with soft but well-defined tannins.
We recommend pairing with red meat dishes, roasts and game, perfect with aged cheeses.
