Distillation
For Calvados Pays d'Auge the copper pot still with repasse and double distillation (first for the brouillis, then for the calvados) is employed; the column still is used for other types of Calvados/AOC. Distillation generally takes place between January and June after a natural fermentation of the cider.
Ageing
Aging in oak barrels in cool, dark cellars; the maître de chai carries out blending to balance different eaux‑de‑vie and occasional finishings/finishes in casks of other wines or spirits are used (e.g. whisky, Sauternes, Port).
