Since 1200 the name Franciacorta has been used to identify the small region formed by the morainic hills in the province of Brescia. Today the word Franciacorta no longer identifies only the Territory, but also the Wine or the noble Italian DOCG "bubbles", and the Method with which they are produced.
Cabochon is today a key label of the Monte Rossa company, born in 1987 from an intuition of Emanuele Rabotti who brought back to the cellar and vineyards all the experiences which he gained while traveling the world.
They are harvested manually and placed in crates, to then be gently pressed, for no more than 48% of the yield. Each cru is vinified alone. The fermentation of the musts takes place in 250-litre oak barrels between September and February; the duration of the refinement is over 36 months.
A wine that has a golden yellow color and has a fine and persistent perlage. On the nose it offers a broad bouquet which recalls aromatic hints of eucalyptus, mint, blond tobacco, deliciously blended with almond nuances, hints of pralines and linden herbal tea. A balanced drink that well balances acidity and structure on the palate and which gives a pleasant citrus taste of grapefruit, dampened by notes of honey.
An important and refined bubbly that will enrich your tables with taste and quality on the occasion of inviting aperitifs, lunches and dinners with fish and shellfish-based courses or in combination with medium-aged cheeses.
