The distillation process follows traditional methods, using discontinuous bain-marie pot stills, which allow for a slow and gradual extraction of aromas. This technique preserves the richness of the scents and aromas of the Cannonau grape, known for their intensity and complexity.
The Berta S'Ulumu Cannonau Grappa presents itself with a luminous and crystalline color. It is distinguished by its rich and enveloping bouquet, where notes of ripe red fruits, delicate spices, and a hint of rosehip can be recognized. On the palate, the grappa is velvety and harmonious, with an impeccable balance of alcohol and flavor, leaving a sensation of warmth that fades into a lingering and pleasantly aromatic aftertaste.
Ideal for tasting after a meal, this grappa can be served at room temperature or slightly chilled. It pairs well with dark chocolate or aged cheeses, enhancing its complexity through delightful contrasts of flavors.
The Berta S'Ulumu Cannonau Grappa Cl.70 is not just a beverage, but a true sensory journey into Sardinian traditions and flavors, a product that every lover of quality spirits should savor.

Distillation
Steam distillation with discontinuous small boilers (caldaiette discontinue); three-step process: first distillation to obtain the flemma, cold filtration, and second distillation to separate the heart; both pomace and wine/grape are distilled for different productions.
Ageing
Aging first in large Slavonian oak vats (vat cellar) and prolonged in barriques and tonneaux (Tronçais d’Allier oak) in underground cellars; some products mature for years in naturally thermoregulated environments; an R&D cellar is used for experiments.
