This grappa is obtained through the distillation of fresh Vespaiolo pomace, meticulously selected immediately after the grapes are crushed, thus ensuring maximum freshness and purity of flavors. The distillation method used by Poli is the traditional bain-marie in a discontinuous cycle still, a technique that preserves the delicate floral and fruity notes typical of the grape variety.
