On the palate it reveals body and well-present tannins, supported by a fresh acidity that gives liveliness. The persistence is pleasant, with fruity and spicy echoes accompanying the finish. It pairs with red meat dishes, braises, roasts and hard cheeses; it stands up to savory, full-flavored preparations typical of Italian cuisine. Suitable for informal dinners and more carefully set tables, it accompanies both ragù and traditional dishes as well as more structured preparations. We recommend serving at a moderate temperature and, if desired, a brief decanting to open the aromas.
