The red vinification is carried out with the grapes harvested in the second or third week of September; the maceration has a short duration of 24-36 hours to have the must to ferment at a temperature of 14-20 °C. The filtered sweet must is kept at 0°C.
In a second step, the dry Sorbara wine and the sweet filtrate are decanted into an autoclave for the natural second fermentation, thus obtaining the desired pressure and residual sugar content.
A Lambrusco with a lively and evanescent foam that shows itself in the glass of a beautiful ruby red color with garnet reflections; the scent is pleasant and reminiscent of violets. The taste is rather dry, full-bodied, harmonious and fresh.
Perfect with first and second courses based on meat.
