Fratelli Serio e Battista Borgogno’s Nebbiolo d’Alba DOC is made from 100% Nebbiolo grapes. Depending on the vintage, the grapes come mainly from Castellinaldo and Diano d’Alba. The vineyards are planted on sandy marl, clay and Marne di Sant’Agata soils, with a southern exposure and elevations ranging from 250 to 350 metres above sea level. The vines are trained using the traditional Guyot system, and the grapes are harvested by hand in October.
In the cellar, the wine undergoes approximately 12 days of submerged-cap maceration in wooden vats, with frequent pump-overs according to the characteristics of the vintage. Malolactic fermentation occurs spontaneously in stainless steel. The wine is then aged in 25- to 50-hectolitre Slavonian oak casks, with the length of wood ageing adjusted to the needs of each vintage. It subsequently completes its maturation in bottle for approximately six months. Annual production is around 10,000 bottles, depending on the vintage.
