The Valdobbiadene Prosecco Superiore Extra Brut Rive di Guia DOCG "Otreval" comes from grapes from Glera vines with a lower percentage of Verdiso; the grapes are harvested by hand in the vineyard of the same name at 300 m asl on the very steep side of the hill. The vines have an average age of 60 years and are rooted in the calcareous soil rich in marine fossils.

The second fermentation traditionally takes place in an autoclave and precedes a stop on the lees for at least 3 months respecting the long Charmat method. The wine is subsequently bottled without residual sugar and above all with minimal quantities of sulfur dioxide.

In the glass it shows a bright straw yellow color with bright greenish reflections, with a fine perlage. On the nose, generous floral aromas emerge first, followed by fruity sensations of green apple, pear and peach, with a slight mineral touch. In the mouth it is decidedly dry and particularly fresh, with a fruity length that leads to a savory finish.
A very versatile sparkling wine to try with sea bass risotto and tempura prawns.
