On the palate, it is round, enveloping, with a refined balance between sweetness and structure, able to offer a long and pleasant persistence. The Rum Demerara Sigle Still Enmore 2009 is ideal for slow tastings and meditation, but it also pairs well with desserts based on dark chocolate or aged cheeses, enhancing the deepest aromatic nuances. A true gem for fans of artisanal rums.

Distillation
Blend of distillates from Coffey column(s) (including a wooden Coffey) and historic pot/wooden stills (Port Mourant, Enmore, Versailles and other stills preserved at Diamond), combining column and pot still techniques.
Ageing
Aging in wooden casks (extended maturation in the Demerara climate), followed by blending (assembly) of the aged distillates; some expressions specify the minimum age of the blend (e.g. 3–25 years).
