"Sarpa" in Veneto dialect means "marc", it is the raw material from which Grappa is obtained. Sarpa di Poli Bianca is a young grappa, distilled with flowing steam, originated from Merlot and Cabernet pomace.
It is produced following a method of artisanal distillation, in small batches, through the use of a copper alembic with discontinuous cycle steam boilers.
A refined distillate that will surely fascinate you. It is presented in the glass with a crystalline color, while to the nose it gives off a fresh and delicate aroma that recalls the scents of the undergrowth, pleasantly decorated with a floral rose aroma.
Excellent grappa to be savored at the end of a meal, for those who love smooth and soft grappas that are nonetheless generous in flavour.

Distillation
Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
