Elegant and immediately appealing, Santa Margherita’s Degagé Extra Dry sparkling wine offers a fragrant profile, with a delicate bouquet of white flowers and white-fleshed fruit and a citrus hint that lifts its character. The perlage is fine and consistent, the aromatic component clean and direct; on the palate the sip is frank, with a balanced softness matched by acidity, making it easy-drinking but with personality.

The slight residual sweetness typical of Extra Dry provides roundness without weighing it down, while the sapidity supports a pleasant persistence. It’s intended as an aperitif but readily adapts to the table: seafood starters, sushi and fresh cheeses are natural pairings, as are simple Mediterranean dishes; it also works well at buffets and summer dinners, simple yet characterful. Serve well chilled, in a flute or narrow glass, to appreciate its fragrance and liveliness.
