The Prosecco Superiore Valdobbiadene DOCG comes from the prestigious land of morainic origin of Conegliano and Valdobbiadene. The example of an exclusively manual agriculture in steep and insidious terrain, combined with a technologically advanced processing designed to keep the wine on its noble lees for a sufficient period to make the Batiso Valdobbiadene DOCG the pleasure of drinking well in all circumstances.
The harvest is done manually in the second half of September; the grape is then dde-stemmed, crushed and subsequently delicately pressed to obtain free-run must. The first fermentation is in steel at a controlled temperature. This is followed by maturation and rest on the lees; then the second fermentation in an autoclave according to the Charmat method and finally again the stop on the lees for at least 45 days and following bottling.
In the glass it has a brilliant straw yellow color. The nose is inebriated by floral and fruity aromas and in particular by spring nuances and aromas of pineapple, pear, apricot and pomegranate, then evolving into hints of white fruit and dry hay. On the palate it is mineral and fresh, thanks to its innate elegance.
Persistence and creaminess at the highest levels make this superb prosecco a choice of quality and the aperitif par excellence. A glass anyway also delicious with hors d'oeuvres, delicate first courses, risottos, shellfish, but it also goes very well with spicy foods and delicious puff pastry.
