Vin Santo del Chianti Classico DOC by Castello di Cacchiano is an elegant expression of Tuscan tradition, produced with selected Trebbiano and Malvasia grapes from the hills of Chianti Classico. This sweet passito wine is born from a careful drying of the grapes, a method that concentrates sugars and aromas, followed by a long aging in small wooden barrels that give the wine complexity and a velvety texture.

In the glass, it shows an intense amber color, enriched with golden reflections that anticipate a broad and deep bouquet: notes of honey, toasted almond, vanilla, and a light hint of candied citrus intertwine harmoniously. The sip is enveloping, savory, and well balanced between sweetness and acidity, with a persistent finish that invites contemplation.

Winery history
The Castello di Cacchiano complex belongs to the Ricasoli‑Firidolfi family and has been part of the local landscape for over a millennium. The site has ancient origins on the remains of a Roman settlement, and the present core, associated with the Ricasoli, is documented as having been built in the medieval period. The estate has maintained a historic winemaking tradition integrated with hospitality services.
Production philosophy
The winery aims to express the terroir of the area by working carefully both in the vineyard and in the cellar. Its stated objective is to enhance the typical character of each vintage and of the individual parcels to produce wines that are recognizable and tied to their place.

The estate falls within the U.G.A. of Gaiole in Chianti, on the Monti in Chianti, with vineyards situated at approximately 340–490 metres above sea level.
