Borghetta is a wine obtained from the soft pressing of the best Trebbiano grapes.
The grapes, harvested at the end of September, are carefully selected before harvesting which is carried out manually. The grapes are cooled and gently pressed. This is followed by cold static decantation and subsequent low temperature fermentation for 10/12 days in steel and then finished in old barriques. The refinement is in wood for a duration of 12 months and then in the bottle for another 6 months before being released on the market.
It has an elegant straw yellow color that is enchanting to look at. On the nose the bouquet is complex, defined by a smoky aroma that makes space on a fruity background. In the mouth it is mineral, a well-balanced sip between acidity and softness, long and persistent, giving a pleasant note of ripe grapes on the palate in the finish.
Excellent pairing with tasty fish dishes and medium-aged cheeses.
