Amaro Sibilla from Varnelli Distillery is a true homage to the herbal traditions of the Marche region, offering a rich and complex taste experience rooted in artisanal methods passed down through generations. Produced in a small family-owned distillery founded in 1868, this amaro is crafted through the slow maceration in pure alcohol of various herbs, roots, and spices collected from the Apennine mountains, followed by careful aging in barrels.
The aromatic profile of Amaro Sibilla is distinctly characterized by notes of gentian roots, cinchona, and anise, beautifully integrated with hints of roasted coffee and cocoa. On the palate, it starts sweet, surprisingly transforming into a bitter and persistent finish, with an echo of sweet spices and a subtle smokiness from the aging process.
