Champagne Millèsime Exception AOC - Drappier 2019

First pressing wine obtained with a soft pressing through mechanically regulated presses. Pumping is avoided by decanting only by gravity in order to avoid oxidation. Very low use of sulfur (less than 30 mg / l). Natural settling and an alcoholic fermentation lasts about two weeks at a low temperature. The malolactic fermentation then following the natural fermentation, as for every Champagne of the Maison, is done naturally and completely.
The result thus obtained is assembled for 50% of the wine aged in oak barrels for one year and after bottling it is aged for 5 years in the bottle.
Moving on to the gustatory and olfactory notes, this Champagne looks almost like a cream with a pungent one reminiscent of toast and fragrance, and then moves on to the floral pleasures sated by Chardonnay; while the sip unmistakably prevails the Pinot Noir and its pleasure given by berries.
Excellent Champagne, it goes well with both cooking dishes and to toast to a beautiful event.
