Franciacorta Pas Dosè is a Classic Method sparkling wine produced by the San Cristoforo winery in Lombardy. It comes from 100% Chardonnay grapes, harvested manually in mid-August, from vines grown on moraine-glacial soil. The production of the base wines is limited, this gives way to enhance the grapes and the characteristics of each vintage.
After a soft pressing, the must is fermented in stainless steel tanks, at a controlled temperature between 16-18 degrees, after being bottled it is closed with a crown cap and laid down in the cellar for the second fermentation. The bottles remain in contact with the lees for 40 months, subjected to mechanical remuage for 8 days, then disgorged, and after 9 months they are put on the market.
In the glass it has a beautiful straw yellow color with greenish reflections, which tend to gold with the passage of time. On the nose the scent is mineral and spicy, with sweet notes of vanilla, hints of gingerbread and ripe yellow apple. On the palate it is sapid, very well structured, with the right acidity and a soft and elegant finish.
Franciacorta Pas Dosé is perfect with oysters and shellfish, raw fish and seafood first and second courses.
