The manual harvest takes place in two phases: the Primitivo in the fourth week of August and the Susumaniello in the third week of September. Winemaking involves fermentation with maceration at controlled temperatures of 22-24°C for a period of 10 days, a process that extracts and fully develops the unique characteristics of each variety.

The wine has an intense ruby color. On the nose, it offers a mix of fruity and spicy scents, accompanied by a balsamic note. Undertones of blackcurrant, blackberry, nutmeg and sweet tobacco emerge, creating a rich and intriguing bouquet.

Tasting offers a velvety and enveloping sensation that pervades the palate. The freshness is accompanied by a sustained tannic texture. The finish is characterized by memories of Mediterranean scrub.

This wine lends itself magnificently to pairings with grilled meat and game.
