The production of this sparkling wine follows the traditional method, with the second fermentation in the bottle which gives the wine its fine and persistent effervescence. Prolonged aging on the lees before disgorgement adds aromatic complexity and richness to the palate, resulting in a Brut of exceptional depth and structure.

Visually, the Brut Extrême presents itself with a brilliant straw yellow color, animated by a fine and incessant perlage. On the nose, it reveals a complex and inviting bouquet, with notes of white pulp fruit, such as apple and pear, citrus accents, white flowers and a delicate mineral vein, which reflect the freshness and elegance of Chenin Blanc.

In the mouth, the wine is lively and refreshing, with an impeccable balance between crisp acidity and a light creaminess. The flavors of fresh fruit intertwine with nuances of toasted bread and honey, the result of aging on the yeasts, leading to a long and satisfying finish, with a pleasant persistence of Vouvray's typical minerality.

Winery history
The estate, recorded as founded in 1893, has built its reputation on Vouvray wines and on the imposing troglodytic cellars carved into tuffeau, where historic vintages are also kept. Over the course of the 20th century the estate's name and history were consolidated under the name Brédif; in 1980 ownership passed to the Baron de Ladoucette group, which modernized operations while preserving its historic identity.
