A young red wine made with Sangiovese grapes and other local red berried varieties harvested towards the second half of September. The vines are grown with the spurred cordon training system, on medium-textured soil that tends to be loose and shallow. The vinification involves a fermentation and maceration of 7-8 days in steel at a controlled temperature of 26°C.
Cadetto has a beautiful ruby red color with purplish hues. Its "youth" is also denoted on the nose with aromas of wild violets and green spices, mixed with slight fruity hints of morello cherry and sour cherry on the finish. A soft and delicate sip, with a discreet tannin and an aftertaste of medium persistence.
It is recommended to combine it with first and second courses based on meat, absolutely try the combination with pizza.
