First-pressed wine obtained with a soft pressing through mechanically regulated presses. Pumping is avoided by decanting only by gravity in order to avoid oxidation. Very low use of sulfur dioxide (less than 30 mg/l). Subsequently we move on to a first natural decantation to then activate two fermentations, the first alcoholic for a duration of about 2 weeks at low temperature and a second malolactic to complete the natural fermentation.
The result thus obtained is not filtered. 20% of the wine produced is aged in oak barrels for a year and after bottling, this is left to rest for 3 years in the bottle before being served.
This Champagne composed of 95% Chardonnay grapes combines finesse and richness while 5% blanc vrai (pinot blanc), a rare grape variety authorized in the Champagne area, brings it roundness and aromas of white fruit.
With straw yellow colors and greenish reflections against the light, it shows fantastic scented notes of vanilla and flowers; while on the palate thanks to that small 5% of Balnc Vrai citrus fruits and vanilla dominate, with slight hints of toasted, fine, fresh and persistent.
