Chronicon comes from the "Yamada" a pure Pecorino, a white grape variety very common in the Abruzzo territories. The harvest is done manually, the picked bunches are promptly taken to the cellar where they are de-stemmed. A soft pressing and cryomaceration follows; the fermentation is carried out in stainless steel containers at a controlled temperature. The refinement takes place only in the bottle for a few months, then it can be marketed the spring following the harvest.
It shows a typically straw yellow color with greenish reflections. Delicate sweet aromas arrive on the nose, almost honeyed sensations that recall fruit, with even exotic nuances, and notes of grapefruit. On the palate it is pleasantly drinkable thanks to its freshness, a medium-bodied drink with citrus persistence on the finish.
It is perfect in combination with seafood first and second courses, excellent with white meat and fresh cheeses.
