Imeneo, un vino dalla personalità avvolgente e complessa, si distingue per il suo processo di vinificazione artigianale. La fermentazione avviene in vasche di cemento per circa 25/30 giorni a una temperatura controllata di 28/30 °C, mantenendo le varietà di uva separate. La fermentazione malolattica si svolge spontaneamente durante l'affinamento nelle stesse vasche di cemento, contribuendo alla ricchezza aromatica del vino.
Dopo la fase iniziale in cemento, si perfeziona ulteriormente con un affinamento in barriques di rovere francese per almeno 10 mesi. Questa fase conferisce al vino una complessità e una struttura che ne esaltano le qualità distintive.
Alla degustazione, si presenta con un colore rosso rubino scuro. Il bouquet aromatico rivela note di mora di rovo, ribes rosso, sfumature balsamiche, cardamomo e liquirizia, con suggestioni finali di caffè e cioccolato. In bocca, il vino si distingue per la sua vellutata consistenza, tannini levigati e una vena di acidità ben integrata, con una persistenza lunga e appagante.
