Castel di Serranova is certainly one of the best and most important wines produced by the Vallone house.
Obtained from a mix of Negroamaro and Susumaniello grapes.
After the harvest towards the end of September, the grapes are subjected to a soft pressing, followed by a fermentation in steel at a controlled temperature for 20 days. Spontaneous malolactic fermentation and alcoholic fermentation. A part of the wine completes its aging in Allier oak tonneaux for 12 months, while another part in a cement tank and subsequently, after the blend, in cement tanks until bottling.
Intense ruby red color, very complex and intense aromas on the nose, with hints of cherry, blackberry, currant, spices and balsamic notes on the finish. At the sip a storm of flavors among the most varied and intense. Extremely good, a surprisingly elegant red.
