Domaine Chanson's Chassagne-Montrachet Les Chenevottes is a high-end white wine that comes from one of the most prestigious areas of Burgundy, the Côte de Beaune, in France. Les Chenevottes is a specific climat (a vineyard appellation specific to Burgundy) within Chassagne-Montrachet, known for producing wines of notable finesse and complexity. Domaine Chanson, with its history dating back to 1750, is one of Burgundy's historic producers, celebrated for its wines that exemplify the excellence of Burgundian viticulture with a focus on fruit purity, elegance and aging ability.

The terroir of Les Chenevottes is particularly suitable for the cultivation of Chardonnay, thanks to its calcareous and clayey soils which give the wine an extraordinary minerality and a balanced acid structure. This specific parcel also benefits from an ideal position which guarantees excellent sun exposure, contributing to the optimal ripening of the grapes and the concentration of flavours.

Chassagne-Montrachet Les Chenevottes stands out for its intense aromatic expression, which ranges from notes of ripe white pulp fruit, such as peach and pear, to hints of citrus fruits and white flowers, with subtle accents of vanilla and sweet spices due to the elegant integration of wood. The fermentation and aging in oak barriques, of which a new part, are managed with skill to enrich the complexity of the wine without overpowering the freshness and minerality typical of Chassagne-Montrachet Chardonnay.

In the mouth, the wine offers a rich structure and a complex palate, with a perfect harmony between power and finesse. The lively acidity and marked minerality lead towards a long and persistent finish, leaving a sensation of elegance and purity that is the signature of the great wines of Chassagne-Montrachet.

This wine is an excellent choice for special occasions and pairs beautifully with refined dishes of fish, shellfish, poultry in creamy sauces and mature goat's cheeses. Its structure and depth also make it suitable for prolonged aging, which will allow the wine to reveal further levels of complexity.
