Il Champagne Œil de Perdrix Brut di Nathalie Falmet è un'espressione sofisticata e affascinante della tradizione champenoise. Prodotto con maestria e passione da una delle poche donne enologhe indipendenti della regione, questo champagne offre un'esperienza sensoriale unica e memorabile.

Al naso, presenta un bouquet complesso e invitante, dove le note fruttate di pesca e albicocca si mescolano armoniosamente con sentori di agrumi e accenni di fiori bianchi. Il palato è vivace, caratterizzato da una freschezza sorprendente e da una bella struttura, supportata da una mousse fine e persistente.

Il termine "Œil de Perdrix" si riferisce alla particolare sfumatura rosata di questo champagne, ottenuta grazie a una breve macerazione delle bucce d'uva con il mosto, donando al vino non solo un colore incantevole, ma anche una ricchezza aromatica e una leggera nota tannica che ne amplificano la complessità.

Winery history
Trained in chemistry and in oenology at Reims, Nathalie Falmet took over the family estate and developed her own production. She began vinifying and marketing cuvées under her own name and works as a winemaker-enologist focused on limited, niche production, practising careful vineyard management and experimenting with different winemaking methods.
Production philosophy
In pursuit of fruit purity and respect for nature: sustainable vineyard management, low yields and artisanal care for the cuvées, and enhancement of the specificity of individual parcels to highlight typicity and minerality.
Terroir and vineyards
Located in Rouvres-les-Vignes in the Côte des Bar. The vineyards are planted on soils rich in Kimmeridgian, typical of the area.
