The Cabernet Sauvignon Colli di Rimini DOC "Novanta" produced by the Podere dell'Angelo winery is an excellent example of how the Romagna region can express itself through an international grape variety such as Cabernet Sauvignon. This wine is the result of careful winemaking and aging in oak barrels, which enhances its structure and organoleptic properties.

Visually, "Novanta" presents with an intense ruby red color, tending towards garnet with aging. On the nose, it offers a complex bouquet where notes of ripe red fruits, such as blackberries and cassis, stand out, enriched by hints of spices, black pepper, and a slight balsamic touch. The wood aging adds an elegant vein of vanilla and tobacco that integrates perfectly with the other olfactory sensations.

On the palate, the Cabernet Sauvignon "Novanta" boasts a robust and well-structured body, supported by mature and well-integrated tannins that promise good longevity. The acidity is balanced, contributing to a pleasant freshness that accompanies every sip. The finish is persistent and leaves a pleasant sensation of red fruits and spices.

This wine is an ideal companion for richly flavored dishes such as red meat roasts, game, and aged cheeses. It is also an excellent candidate for aging, capable of developing further aromatic nuances if stored correctly.

In summary, the Cabernet Sauvignon Colli di Rimini DOC "Novanta" from Podere dell'Angelo is a wine that elegantly combines the typicity of Cabernet Sauvignon with the unique characteristics of the Romagna terroir, offering a rich and complex tasting experience.
