Sassomoro is produced with grapes from 50% Lambrusco Grasparossa and 50% Lambrusco Salamino vines. After the harvest, the berries undergo traditional pressing with maceration for 48 hours at 15°C, followed by low temperature fermentation with selected yeasts, and refermentation in "cuve close".
You can admire its deep, dark red colour, the nose is filled with fruity aromas of currants and Vignola corn, dense and long-lasting scents that seem to never end. On the palate it is dense, silky, without corners, in perfect harmony with the olfactory aromas of red fruits and freshness, making the sip pleasantly smooth.
A "classic" Lambrusco, with an extremely pleasant and, above all, non-trivial taste. A perfect pairing sees it in the company of a first course from amatriciana, or aubergine parmigiana or mushroom risotto. Ideal with cured meats that are not too lean and absolutely worth trying with a "significant" fish soup such as brodetto or cacciucco.
