Versante is a red wine produced in San Pancrazio salentino (BR), with grapes from 100% Primitivo vines trained with spurred cordon, on calcareous-clayey soil, with North East-South West exposure.
The harvest is done manually and mechanically, and goes from the end of August to the first ten days of September. The vinification involves a soft destemming-crushing, with fermentation and maceration at a controlled temperature, in stainless steel tanks for about 15 days, followed by spontaneous malolactic fermentation and stabilization in cement tanks.
In the glass it has an intense ruby red color, with bright violet reflections. The sense of smell perceives intense fruity aromas of red fruits, where black cherry and plum prevail. In the mouth it is extremely fine and fresh, very soft and balanced, with an elegant tannic texture.
It goes perfectly with first courses seasoned with meat sauce, white and red meats, and aged cheeses.
