The excellent sparkling wine is made with Chardonnay grapes, coming from the millenary vines of Baone, in the southern part of the Euganean Hills. This territory, in fact, given its high clay content, is particularly suitable for the cultivation of vineyards. The grapes used to produce this sparkling wine are harvested at the end of August. We then proceed with the white winemaking process with soft pressing, followed by fermentation in steel. Finally, the wine is left to age for 6 months on fine lees and refermented in the bottle. 

The sparkling wine from the Le Volpi & Monte Fasolo winery is characterized by a fine and creamy perlage, which hides in the slightly golden color of the wine. Its boquet is reminiscent of nature, especially flowers and for this reason it is fresh and intense on the nose. The freshness is also preserved in the mouth, where the sparkling wine is full-bodied and balanced.

This sparkling wine is excellent to be savored accompanied by fish and cheese dishes.
