The excellent temperature variations during the harvest period contributed to giving the grapes an excellent state of ripeness and an optimal balance in terms of sugars, freshness and polyphenolic compounds. After being carefully collected in baskets, the grapes were delicately pressed, and through a cold decantation process, the clear must was separated. Fermentation took place at a controlled temperature of maximum 18°C for approximately 15 days. Before bottling, the wine matured in stainless steel tanks at low temperatures for a few months.
The result is a straw yellow wine, enriched by light greenish reflections. On the nose, it presents itself in an intense way, revealing floral and fruity notes. On the palate, it stands out for its good structure, supported by a pleasant freshness that persists until the long finish.
Excellent for an aperitif and fish-based dishes. Also worth trying with sushi and tuna sashimi.
