The Pinot Noir vineyards are located on the first and second hills of the Oltrepò Pavese, cultivated on soils with a composition deriving from the disintegration of sandstone and calcareous marl, with a clayey part, at an altitude of 300/350 meters above sea level. with spurred cordon training system and traditional Gujot. The vinification begins with a soft pressing of the grapes and separation from the skins, the must obtained as soon as it is colored in soft pink is decolorized by hyper-oxygenation. Fermentation takes place in stainless steel tanks at a controlled temperature of 14°-20°C for a period of about 15/20 days. The wine is then decanted a few times and always matured in steel for about two months. Then the transfer into autoclaves for the second fermentation takes place which will end after about 2 months; the wine will further refine 30-40 days in the bottle before being put on the market.
When poured, it shows a straw yellow color with greenish reflections. On the nose it expresses an intense and complex bouquet, marked by floral aromas and marked fruity hints of banana, pear and apple. A pleasantly elegant and soft sip, with an extraordinary structure, a very marked body and a good retro-olfactory persistence.
An excellent aperitif glass, also perfect throughout the meal, especially with fish-based dishes, white meats and cheeses in general. Try the combination with pizza.
