Since 1200 the name Franciacorta has been used to identify the small region formed by the morainic hills in the province of Brescia. Today the word Franciacorta no longer identifies only the Territory, but also the Wine or the noble Italian DOCG "bubbles", and the Method with which they are produced.
Cabochon is today a key label of the Monte Rossa company, born in 1987 from an intuition of Emanuele Rabotti who brought back to the cellar and vineyards all the experiences which he gained while traveling the world.
They are harvested manually and placed in crates, to then be gently pressed, for no more than 48% of the yield. Each cru is vinified alone. The fermentation of the musts takes place in 250-litre oak barrels between September and February; the duration of the refinement is over 36 months.
A brut sparkling wine with bright straw yellow colors and a very fine perlage. On the nose it gives off a large and delicious bouquet which recalls the scents of sugared almonds, passion fruit and nuances of almond, on an aromatic background of wild mint. A drink that offers persistence and crunchiness on the palate, which evokes fragrant almond and fruity notes on the finish.
A bubble that does not disappoint, it will bring elegance and quality to your tables on the occasion of tantalizing aperitifs, lunches and dinners with fish and shellfish-based courses or in combination with medium-aged cheeses.
